Hey everyone,
So my first week of being Vegan has gone really well - I have cooked more, tried new foods and prepared my meals too (which is something I have always been bad at.) I have actually felt a lot better too, I have obviously eaten healthier, but also tried to re-create some of my old favourites. These are a few meals i've had (from breakfast - dinner), over the last week. I also included some of my favourite snacks I found too, all natural and delicious! Let me know what your favourite meal is and new foods you have tried. I also bought Niomi Smart's 'Eat Smart' which is amazing and has helped me a lot!
Breakfast
So I loooooove porridge, I used to claim that I hated it but I had never actually tried it (this tends to happen a lot). My favourite way to eat porridge, especially if I haven't got a lot of time in the morning is with Almond Milk, some sweetner and a sprinkle of cinnamon. I love cinnamon with apple too, so it adds a whole new sweetness to this breakfast. It's so easy, quick and delicious. I have also started adding Chia seeds to this too for some extra goodness!
After recently buying some cook books and following more blogs I have tried to make smoothie bowls too and have a lot of recipes I would like to try. However this is my go to breakfast at the moment.
Lunch
Using Niomi's book, I made the 'Warming Squash Soup' for me and my Mum. After accidentally reading it wrong and adding too much Coconut milk, I saved the soup (with the help of Mum!) and it was so tasty - and healthy! I have always loved Butternut soup after trying my Nan's homemade soup. However I never made soup myself and would always buy them at the supermarket - which used dairy such as milk/butter/cream, which you do not need. This recipe was so lovely and I definitely recommend it, it made 4 servings, so I was left with 2 for my lunches at work, which makes things so much easier!
Snack
These are so yummy to have as a snack and I always bring them to work, they remind me of 'Fruit Winders' I had as a child - but much healthier and 100% fruit!
Another new favourite! These plant based yogurt desserts are amazing, it tastes like a Nutella dessert. 100% plant based, 30% less sugars than dairy desserts and so yummy!
Dinner
So i made this after seeing 'Minimalist Baker's' recipe on her blog. I changed it a little bit, but all credit goes to her! If you are like me and miss your favourite 'Mac And Cheese' or 'Cheesey/creamy pasta sauces' - then look no further! This is THE best cheese/cream pasta sauce alternative I have tried.
Basically you fry onion and garlic with oil, thicken with flour and add non dairy milk (I found Almond to work the best!) and a sprinkle of nutritional yeast, fry your fav veggies and add to your pasta. Its so nice and creamy, and so easy to make! Literally takes 20 minutes and that was for 2 servings! Will be making this a lot after work, it really gives me an 'Old Favourites Throwback' that is so much better for you!
Dessert
I made these desserts for me and my boyfriend Joe (who is not vegan but still really liked them! This is just flour, sugar, baking powder, cocoa powder (be careful, some aren't vegan, bournville is though!)/or cacao powder, almond milk, non dairy choc chips! This is sooooo good, and i recommend it with some non dairy ice cream - Swedish Glace is my favourite.
